私の長年の(12年以上前からの)チキンライスノートを調べていたら、のべ、食べたチキンライス屋は、70店弱。おいしいと聞いたところ又は、行列の出来ている知らない店は必ず食べるようにしている。もちろん、その内の10件は、ヘビーローテションでシンガポールを訪れる度に行く様にしている。その中で、私は、チキンライスという料理を私感的&客観的にどうして美味しいのか?又は、その美味しさはどこにあるのかを食べる度に自分に問いているのだ。そして、日本帰国直後、まだ脳に記憶が残っている間に、真っ先に海南鶏飯食堂のチキンライスを食べて、私好みに仕上がっているかどうか確認している。料理に完璧というものは存在しないと私は思っているのだが、海南鶏飯食堂のチキンライスは手前味噌だが、そこそこいい味を出しているなと実感する昨今だ。ちなみに、上のチキンライスがどこのチキンライスだか、分かった方は、結構通です。ビッグヒント:特徴は、ライスの仕上り加減とキュウリのカットの仕方、そして、シンガポール中を回ってもどこにもない、チリソースの色にあります。毎日、とてつもなく行列の出来る専門店です(答は、ブログの最後に)。 <br />

I have been collecting data of Singapore food since 12 years ago and found out that I have visted 60+ chicken rice stalls in Singapore. These are of course recommendation by my friends, by some foodie blogs and also the <a href="http://www.makansutra.com/">ultimate guide: Makansutra</a>. I don't know how many of great places to eat chicken rice exist now but I do frequent few stalls that I am comfortable with, they are delicious but within my vicinity. My notes are simple, why is this chicken rice particularly good, why is it special and if I were to change some things, what will it be? Plus of course I note on the rice, the sauces and the chicken and sometimes gravy. When I go back to Tokyo, the first thing I do is, I eat chicken rice at my joint and check to see if we are on the right track -I think we are, fortunately. BTW, if you can guess the name of the chicken rice stall of top foto, you know what's up.<br />

様々なブログ等で、海南鶏飯食堂のチキンライスは、現地に近い味がする、とよく目にします。現地に「近い味」というのはいったい正直どういう意味なのでしょうか?本当に、説明してほしいですね。私は、シンガポール(現地)の味に近い味を出す、というよりは、その美味しさを理解し、チキンライスという料理を、シンガポールでチキンライス修行していない私のお店が提供するチキンライスであり、現地の味をレスペクトした、現地の味だと思っている。<br />

Through people's blog (mainly Japanese ones of course), I often witness a comment that says: the chicken rice at Hainan Jeefan Shokudo is close to the ones in Singapore. "Close to the ones in Singapore?" But what exactly is an authentic chicken rice? I just want bloggers to clarify the authentic taste of chicken rice before jumping to conclusions. <br />

シンガポールでチキンライスを食べると、チリソースは、当然「これ」といった味や仕上りは正直ないと断言出来る。文東記(ブーントンキー)のチリソースは比較的甘めな仕上りだったり、Yet Conのは、チリボー(チリのピューレ)のようにシンプルだし、それぞれどの店も濃度が違う。ライスの味もテクスチャーもそう。鶏の温度も、どのタイミングで食べるかで大きく違うし(特に冷水にいれないオールドスクールなお店: Yet ConやNam Kee 注:wee nam keeではありません)お店によって鶏の茹で加減は大きく異なる事も。場合によっては、ちょっと火が通っていないかなという鶏もあるけど、それはその店の個性。カットの仕方も多くはないが、店によってサイズが違う。<br />

My conclusion is that chicken rice is pretty much a food that has many variations and flavors are diverse. I don't think there is one true definition of chili sauce -ex. Boon Tong Kee has quite a sweet note but Yet Con is more like flavored Chili Boh etc. This extends to rice, gravy and chicken -textures, flavors, doneness -they all depend on the stall's philosophy. If they don't serve ginger sauce, will it seize to be an authentic chicken rice or vice versa? If the stall pours gravy on the chicken, will it seize to be an authentic chicken rice? You decide.<br />

多くの観光客が食べるチャターボックスのチキンライス、又は、多くの日本駐在員が好んで行く、天天やWee Nam Keeは、チキンライスの味の基準になっている気がする。そして、それらのお店から大きく味が遠のくと現地の味では、なくなるという事だ。これは大きな間違いだと思っている。シンガポリアンでも気がついていない人が多いのだが、実は、チキンライスは味に結構バリエーションがある食べ物だと私は思っている。私は、どこそこのが一番美味しいというよりは、そのバリエーションを最近では、楽しんでいる。なんでもそうだが、料理にバリエーションがあるからこそ、その料理を面白くするのでは、ないだろうか。<br />

People in Japan who have travelled to Singapore (tourist) tend to standardize chicken rice authenticity with Chatter Box's chicken rice (but chicken rice is not all about Chatter Box). Expats who have lived or who live in Singapore do the same but they prefer Tian Tian and Wee Nam Kee (likewise chicken rice is not all about those outlets either). So generally speaking, if the taste is not up to par with those outlets, they tend to categorize chicken rice served in Japan as "not authentic" or close. I myself am aware of the diversity in flavors of chicken rice served in Singapore after visiting so many so I enjoy that difference and in my book, they are all authentic in their own way. What matters is, does it taste good?<br />

最近、ドライ肉骨茶をシンガポールでもたびたび目にするようになった。もちろん、こてこての潮州スタイル(ペッパーガーリック風味のクリアなスープ)のお店や福建スタイル(漢方風味が効いているダークなスープ)のお店では、なかなかお目にかかる事ができない。もともと、ドライバックーテーはマレーシアが発祥なので、当然、シンガポールには沢山ある訳がない。ただ、珍しいので、早速とあるお店でオーダーする事に。ちなみに、スープが付いてくるのだが、こちらは、潮州スタイルだった(写真に納めるの忘れた)。熱でジュ―ジュ―という音をたてて、クレイポット・ドライバックーテーがやって来た。さて結論、バックーテーの味のイメージは全くない。具には、ホロホロのリブと豚バラに、オクラ、そしてなぜか、お好み焼きに入っている感じの切りいか。ソースは、トロってしており、うまく肉に絡み付いている。オクラが何故入っているのかは不明だが、イカは、なかなか豚との相性もよく、風味も食感もいい。ソースの味は、甘い醤油風味に鷹の爪のちょっとしたパンチが。クンパオチキンに例える人が多いみたいだ。恐らく、この料理をドライバックーテーとしてメニューに載せた方が、インパクトがあるのだろう。写真下も別の場所で食べたものだが、基本的に入っている具は、一緒だった(こちらは、鉄鍋で提供されていた)。<br />

I don't remember seeing dry bak kut teh on the menu 20 years ago but nowadays in Singapore, there are few places you can order this dish at some bak kut teh joint, especially klang style bak kut teh shops for this "dry concept" came from Malaysia. Two of the shops I ate had the same style: the ribs and pork belly were tossed with sweet soy pork stock reduction sauce with dried chili (but not fiery, just for flavor and texture), okra and julienned dried cuttlefish. Actually, the combination of dried cuttlefish and pork is not bad -just like pork and dried shrimp combination. Interesting that both of the restaurants I visited gave me a bowl of Teochew style (pepper and garlic) soup. But I find this dry bak kut teh a misnomer -perhaps rather than writing Kung Pao Pork Rib on the menu, writing "dry bak kut teh" arouses more curiosity (I certainly became curious). But if you expect the flavor to be Bak Kut Teh, you will be disappointed. Nonetheless, it is a flavorful dish that goes incredibly well with rice.<br />

丁度、5年前の2008年に、<a href="http://singaporecooking.blogspot.jp/2008/06/blog-post.html">ホーカーセンターは大丈夫なのか?</a>というブログを掲載した。あれから5年、色々な動きを私は、シンガポールで目撃している。今回は、シンガポリアンであるCharmineさんから<a href="http://www.blogger.com/comment.g?blogID=7562839677710197704&postID=8006510980301581884">コメント</a>をいただいたので、改めて今の現状をまとめてみた。私がシンガポールへ訪れると、ローカルの新聞であるストレーツタイムズに必ず目を通す。目立った記事をここでいくつか紹介した。 <br />

昨年よりシンガポールでは、人気店が門外不出のレシピを売りますというニュースが数件あった。その中で最もメディアで注目されたのが、Upper Payar Lebarにある有名な広東ローストのお店、Kay Lee Roast Meat Joint.である。そのレシピの金額にびっくりする<br />
SG$2,000,000(SG$が70円だとしたら1億4千万円だ!。結局、その金額では、おりあいが、付かずだ(当たり前だ!)。レシピを売に出した理由は、定年退職後の資金の為だという。<br />

長い間、営業していたお店が、閉店するというニュースが数件あり、かなり大きく紹介されていた。理由の多くは、料理人の高齢化だけとは、限らないのだ。East Coast Park Lagoon Food Centreにあるsatay beehoonで有名なMeng Keeは、料理人がガンの為、閉店。 後継者もいない。私もここのsatay beehoonは、2度程食べたが、ソースがおいしい。リトルインディアにある、中国スタイルのフィッシュヘッドカレー屋であるSoon Hengは、人手不足で閉店。オーナーの子供たちは、出来る限り手伝っているが、お店を継ぐつもりは、ないという。後継者問題だけでなく、外国人の雇用枠を越えているので、これ以上、外国人を雇えないのだ。これは、この店に限らず現在、大きな問題となっている。シンガポールでは、日本では考えられない程の外国からの労働者を雇用しているが、今のガイドラインでは、飲食店はなかなか運営する事が困難になっている。飲食店は、皆ガイドラインの緩和を願っている。それでは、シンガポールの若い人に頑張ってもらえばいいと考える人もいるが、シンガポリアンが飲食店(特に現地の料理を売りにするお店)で働きたがらないのだ。長い労働時間、賃金、そしてかっこよくないというイメージが大きな理由だ。フレンチ・イタリアン等のコンテンポラリークイジーヌには、(かっこいいというイメージがあるので)若い料理人は料理学校を卒業したらホテルや星付きのホテルで修行を始める。理由は分かるのだが、悲しい限りである。後は、South Buona Vista にあるLim Seng Lee Duck Riceはその45年の歴史に幕を閉じる(2013年6月)。こちらも閉店の理由は、後継者がいないという事とオーナーである料理人が、67歳という事で、仕事がハードだという事。それぞれ、色々な問題でお店を閉店しているが、共通するのは、後継者問題である。ここをどうにかしないと、本当のホーカーフードは、シンガポールから無くなってしまう。<br />

若い料理人に、ローカルフードのパッションを植え付けるには?それを考えていた矢先に、今度は、ショッキングな記事を目にした。23歳という若さでホッケンミー屋を切り盛りする若き料理人の話だった。彼が直面している問題は、シビアだ。10人中、9人のシニア層のお客は、彼がホッケンミーを作っていると、店の前を通り、肩をすくめて、素通りするという事だ。その理由は、「若僧に旨いホッケンミーが作れるはずがない」。そう、多くのホーカー料理人は、40歳以上で、その顔は、経験と実力に満ちあふれている。若き料理人が頑張っているのに、シニア層に指示されないというこのジレンマは 、どう解決していけばいいのか?若き料理人は、言う「必要なのは、シニア層からの頑張れの一言」だと。なんとも可哀想な話だ。<br />

Sempang Bedokのホーカーセンターが、民営化されたという話も大きく取り上げられた。 そうホーカーセンターは、国営である。もともとホーカーセンターが、誕生した大きな理由は、ホーカーをもっともっと衛生的に安全なものにするという政府の目的があったのだ。ちなみにホーカーセンターは、NEA(National Environmental Agency), HDB(Housing and Development Board)そして、JTC Corporation(Jurong Town Corporation)。民営する目的は、なんだ?シンガポールの食文化が失われつつある現状があり、昔の良きシンガポールをテーマに、食で人と人を繋いで行きたいそうだ。本来のルーツを知り、食への関心を高めて行きたいということだ。官僚の発想ではないというところに目を引かれる:無料WIFIの利用、週末には、フリーマーケット開催やライブバンドの演奏もあるという。まだ、こちらのホーカーセンターは、行った事がないが、いずれチェックしたいと思う。<br />

さて、ホーカーセンターは大丈夫なのか?5年経った今、もっと深刻になっていると判断する。もちろん、誰も何もしていない訳ではないが、ペースが、早く手遅れになってしまっている。今後、日本同様に高齢化が進み、もっともっとリタイアする料理人が増え、後継者も現れず、若き料理人も興味を示さないとなると、ファストフードビジネスであるフードコートが、ますますその存在感が増してくるだろう。日本人の私が言うのもへんだが、これらの理由で、私は、シンガポール料理をやり続け、そして生き甲斐を感じている。私の最大のミッションは、シンガポール食文化を守って行く事にあると最近思う様になった。なんてね。<br />

ミークアという、シンガポール独自の料理を聞いたことあるだろうか?ミーはホッケン語で麺、そしてクアは、マレー語でグレービー/ソース。言葉のパターンとしては、ミーゴレンと同じである。さて、このミークア、あまりシンガポールでも知られていないかもしれないが、インド系ムスリムのスップトゥーラン(Sup Tulang=マトンの骨の中の随を現地のバゲットと一緒に食べるスープ、といってもスープが非常に少ないですが...... しかも、お皿で出されているし・写真下)を出しているお店の看板メニューによくあるのだ。インドムスリム系のストール(お店)をママストール(mamak stall)ともいう。Mamakとは?インドムスリムの男性をいいます。私の持っているペナン料理本によると、このママという言葉は、タミル語で叔父さんという意味だそうです。ちなみにsup tulangは、tulang merahとも呼ばれている(こっちの方がしっくり来るな、merahはマレー語でレッド)。<br />
ミークアに戻りましょう。このグレービーがまさしく、真っ赤に染まったSup Tulangのソースをマトンスープをプラスして、マトン肉とキャベツ、そしてポーチドエッグを入れた麺料理。そのショッキングな赤色は、ママッ風ミーゴレンと同じでスパイスの色ではなく、紅色素だ。こんなに真っ赤にする必要があるのか?と思うが、例えば、タンドールチキン等も場所によっては、結構紅食用色素を入れる。赤色は、インド料理においては、目に刺激を与えるといわれているが、これをいれないと、おそらく、ドス茶色いものになるのだろう。さて、ミークアの麺は、シンガポールでは、いたるところにあるホッケンミーという麺を使用している。スープの味だが、少しピリッと辛く、甘い。スパイスはあまり入っていないようだ。入っているとしたらチリパウダーに胡椒かな?というのも入っていたら、カレー風味になるからだ。とにかくマトン臭が強く、マトンがダメな人は、決して手を出せない逸品。甘さがあるので、食べているうちに、だんだん飽きてきてしまう(私は)。その甘さをカットする酸味がほしいのは、俺だけなのか。問題は、麺なので、ちょっとでもすするようなものなら、紅色がシャツについてしまう。私は、ナポリタンのようにスプーンとフォークで麺を慎重に食べていた。この日は、不幸にも白いポロシャツを来ていた。次回は、赤いポロシャツで食べよう(というか、次回があるのか?)。<br />

Introducing the unknown, ladies and gentlemen, -mee kuah. Being Singapore food gastronaught that I am, I did not hesitate to eat this shockingly red stuff, I mean noodle. Of course the red coloring does not come from spices, but non other than food coloring. If they didn't add any coloring perhaps this dish would have a slightly brownish color like sup kambing (or mutton soup). Mee means noodle in Hokkien dialect and kuah is gravy in malay. The kuah is definitely a sauce from sup tulang or bone marrow soup a.k.a. tulang merah - uniquely Singaporean dish of stewed mutton bones with some sweet-spicy sauce (pics below). For all I know, only mamak stall sells this stuff along with their famous sup tulang. (mamak is a term for Indian Muslim men living in Singapore and Malaysia. According to a Penang cookbook which I have, mamak originally means "uncle" in Tamil language). It's got some slightly spicy kick and sweetness (which I don't really think it needs to be this sweet -my personal opinion). Although spices used are very subtle -maybe some chili powders and some black or white pepper powder. If there were other spices like cumin, coriander or fennel, I would definitely taste it -for it will be more like a curry. Inside is chopped mutton bits and shredded cabbage and some poached/fried egg with other garnishes like potatoes, green chilies and green peas. I wish there were some sprinkles of chopped cilantro to balance the flavors, it definitely needs some herbal kick to this dish. The kuah or the gravy has quite a strong mutton flavor so maybe some julienned fresh ginger would be also nice. It should cut the yucky sweetness. The gravy is also thickened with some kind of starch -potato or corn or something so that it clings nicely to the noodles. Some places add chopped green chili to this and I think that is a damn welcome addition not only for flavor but texture-wise and for visual appearance. Anyhow, I would not recommend this dish if you are wearing white shirt. I'd say they should cut the noodles into bits like katong laksa and so one can eat it with a spoon and not slurp this. I don't know maybe I should wear a red polo shirt next time (if there is next time...). <br />

数年前から、シンガポールでは、日本のラーメンブームが。特に日本食贔屓であるシンガポールは、アジアマーケットでの店舗展開をテストランするには最高の場所といえるー物流・食材・そして、食のトレンドに敏感な国民性。ブランド力をここで上げる事ができたら、次は、マレーシア、インドネシア、タイ、etc. ラーメンを私は、シンガポールでは食べないが、一杯大体、SG$12-SG15で、地元の麺の3倍は、余裕でする。これをホーカーセンターの価格に比べれば、およそ4−5倍と高値だ。無論、ラーメンと地元の麺類(ラクサ、ローミー、ホッケンミー、チャークェイティオウ、バクチョーミー、ワンタンミー、プローンミー、etc)を比べる事は、出来ないが、ここで取り上げたいポイントは、ラーメンは高値でもシンガポリアンは、食べるという事だ。例えば、ラーメンの価格帯で上の写真のようなラクサ(ココナッツヌードル)を食べる事は、シンガポリアンの中では、考えられないのだ。ちなみに上のラクサは、Alexandra Village Food Centreにある有名な、Depot Rd. Zhen Shan Meiの土鍋ラクサ(Claypot Laksa)。価格は、たったのSG$3。これをラーメンと同じ価格で販売したとしたら、当然売れない。価格は、店が決めるのではなく、食べる側(消費者)が決めているからだ。いくら、ここのような有名なラクサ屋であっても、このラクサをSG$6で売ったとしたら、シンガポリアンは、高いと判断し、他の店に行ってしまう。すなわち、地元の麺職人たちは、安い食材でやらなければ、商売がなりたたないということなのだ(原価率の問題)。それでなくても、今では、食材や燃料のインフレがすごい。しかし、にもかかわらず、お店は、以前の価格(10年以上前)でがんばらなければ、お客が遠のいてしまう事をおそれている。食材のインフレ、すなわち、利益率の低い商売、イコール魅力のないビジネスモデル、イコール若い世代は、やりたがらない。長時間労働に加え、いくら頑張っても、ラクサをSG$7で買ってもらえない今の現状は、今後もっともっと大きな問題になるはずだ。消費者マインドが、変わらなければ、いくらおいしいお店でも、後継者の問題があり、なくなっていくに違いない。今、そういった悲しい事が、じわりじわりと起きているのだ。シンガポールの麺料理はポテンシャルが、高い。しかし、そのポテンシャルを活かしきれていないのは、消費者マインド革命が、起きていないからだ。日本でも、ちょっと前までは、ラーメンを600円で食べていたのが、今では1000円以上だしても並んでいるお店があるのだから。<br />
<span style="font-family: Verdana, sans-serif;">In recent years, ramen business is booming in Singapore. 10 years ago, ramen did not have a reputation it has now and it has that trendy image so to speak -eating ramen. Now, I am always amazed how Singaporeans are so pro-Japanese food and with the recent launch of hot-shot star rated Japanese dining at MBS and Sentosa, the recognition (Japanese food) is getting even bigger (I am glad to witness that because I love Japanese food, quite naturally). Anyway, I do not eat ramen in Singapore because I am there to eat local food so I won't comment on how good Tonkotsu King is or Ippudo is. Actually, I don't frequently eat ramen in Tokyo either and I don't go hunting ramen trends here in Tokyo. I just eat at my comfortable nearby places. To a foreigner like me, Singapore is a noodle heaven with wide ranges of noodle dishes from coconuty laksa to irresistible bak chor mee, lor mee, char kway teow, hokkien mee, prawn mee, wanton mee.... the choices are simply mind boggling -and they are all amazing -textures and flavors. I am not comparing ramen and local noodles (let me simply call it mee here). But I think this "mee" is taken for granted, its got a lot of potential to be better but cannot. Why? Correct me if I am wrong, a bowl of ramen costs 12-SG$15. That means, they could spend more money on quality ingredients so, if the food cost is 30% (average on ramen), they spend $4-$5 on ingredients! The photo pic, claypot laksa at Depot Rd. Zhen Shan Mei for a small size is only 3 bucks. If they use a higher quality ingredients and sell it for say, $7, they will go out of business because people will start patronizing other stalls that sell laksa for a lesser price. My point is, a famous stall such as this laksa stall cannot raise prices in order to improve the flavor of their current laksa. The selling price is determined by the consumer not the stall owners. In the past 10 years, prices of ingredients and utility bills have inflated but the bowl of noodles remains the same or simply 50 cents or so higher. This means the profit margin is getting less and less for the stall owners. Low profit margin means bad business. On top of this low profit margin, comes long hours of hard work, day off once a week, namely, hard labor. Popular ramen joints do purchase, high quality ingredients and that is why the soup tastes good or toppings such as braised pork tastes good. Food is all about ingredients of course. Lame ingredients yield mediocre food, it's a fact. Singapore mee dishes have a lot of potential because people cooking it do not have such liberty to use better ingredients (al</span><span style="font-family: Verdana, sans-serif;">though, with cheap ingredients, I think they do a great job selling it for 3 bucks...) given the current selling price. If they use better ingredients, their food would taste even better of course. I do not mean use lobster in prawn mee or those kind of gimmicky make-over. Just better ingredients like more shells or pork bones for example -an ingredients needed to beef up the flavors. If the Singaporean consumer do not have a mind shift in hawker prices, this is not going to happen (don't get me wrong though, I do also acknowledge that some people cannot afford to pay $5 for a bowl of mee, what I mean is, there should be more places with stalls with differing selling prices like ramen -you can find ramen in Tokyo for 300yen or you can find it 5 times that price, easily. The difference is quality ingredients.). Sadly, with high food cost and long working hours, working at a hawker stall is not a dream job for young Singaporean to-be-cooks or young entrepreneurs. 牛肉粉・牛肉面・ビーフヌードルは、シンガポールのどのフードセンターにもある、定番料理だ(Beef Kway Teow、Gu Bak Kway Teowとも言われている)。ただ、スープの入ったバージョンとグレービーのかかったドライバージョンで大きく別れる。そもそも、スープの方は、潮州スタイルといい、ネチョッとしたグレービーがかかっているのを海南スタイルという。ただ、海南風のドライスタイルでない、潮州風のドライビーフヌードルは、一度食べた事はある(詳しくは、次回のブログで...)。この二つのスタイルは、定番の麺も実は、異なる(選べるケースはあるが)。潮州スタイルは、Phoにちかい、クエィティオウを使用し、(海南)ハイナンスタイルは、チョービーフン又は、ライフン(太めのビーフン)を使用する。あくまでも厳密にいうと、テオチュウは、ビーフクエィティオウで、ハイナニーズがビーフヌードルだ。特に上写真のセレンバン式ビーフヌードルは、かなり太めのチョービーフンだ(本当はもっと太目なのだが)。ラクサに使用するものよりも太い。セレンバン式は、いわゆる、海南スタイルと同じなドライスタイルで大きな違いは、ない。ただ、クアラルンプールから1時間ばかし離れた、セレンバンという町で、えらくポピュラーなので、その名前が定着している。いわゆる、ビーフヌードル=セレンバンという事だ(そこの麺は写真のものよりもっと太い)。シンガポールでセレンバンビーフヌードルを食べれるのは、私の知る限りでは、1件ある:Mr. Wong's, Blk 84 Marine Parade Central Food Centreにある。かなり、ローカルの間では、ポピュラーなビーフヌードルを提供するお店だ。ビーフスライスだけでなく、ホルモン系と、ほのかに漢方の香りがする、ねっとりとしたグレービー(これはどのビーフヌードルでも定番だ)。キアムチャイ(塩漬けからし菜)とピーナッツがいい食感と味のアクセントになっている。ライムを上から絞れば、程よい柑橘系の酸味が全体的にさっぱりとした印象を与える。ビーフスライスなどは、酸味の効いたチリソースで頂く。写真には写っていないが、ドライを注文すると、必ず、あっさりとしたビーフスープがついてくる。ここのスープの具は、めずらしく、大根と人参が入っている。さて、多くのドライビーフヌードル(ハイナニーズスタイル)のチリソースには、マラッカ特産のチンチャロ(Cincalok)という、発酵した網エビ(塩辛)が、アクセントとなっていて、他の料理に提供されるチリソースと比べかなり個性があるのは間違いない。潮州風のチリソースは、酸味とニンニクが効いており、おろしたガランガルを好みで入れるところが多い。これは、潮州風のマトンスープと良く似ている。ちなみにページ下の写真は、ローカルのハイナニーズビーフヌードル(トアパイオーにあるHainan Xing Zhou Beef Noodle)。<br />

Beef Noodle and Beef Kway Teow are both noodles with beef parts (beef slices, tendons, tripe, meatballs). But beef kway teow is usually associated with Teochew while beef noodle is more Hainanese. Of course this is not the only difference but a beefy soup enhanced with gula Melaka (palm sugar) and galangal (lengkwas) is Teochew and gooey gravy thickend with starch is Hainanese. The Hainanese style is popularly known as dry version but there are Teochew style dry version which is more like kway teow tossed with oil and chilli sauce topped with beef parts (this type is quite a rare find). Beef noodle that is synonymous with Hainanese-style in Malaysia is Seremban Beef Noodle (city 70km south of Kuala Lumpur). There's one stall in Singapore that serves this Seremban Beef Noodle at Marine Parade Central. The noodle is usually thicker and chewy, the gravy is starchy of course but I cannot pin-point the dramatical difference here in the gravy with the local Hainanese version (pic below, local Hainanese Beef Noodle at Hai Nan Xin Zhou). Anyhow, it is very curious for a non-Singaporean like myself, why soup is Teochew and gravy is Hainanese... and which came first? Through my web search though, I now learn that Shantou is famous for beef noodles. I've also had some awesome beef noodle while in Taipei. Of course you also have pho in Vietnam and similar ones in Thailand. Knowing that Teochew people migrated to these countries, it isn't so off the wall to mention that, if it weren't for the Teochew people, there may not be beef soup noodle/kway teow in these countries.<br />

客家のヌードル、ビーフボールヌードルは、あまりめったにその辺にある料理ではないので今回紹介しよう。ボヨンボヨンと弾力のあるシンプルなビーフヌードルに、あっさりとしたスープ。ビーフンが入った、あっさりとしたヌードル料理だ。ミートボール以外には揚げねぎとセロリ菜だけだ。付け合わせは、酸味の効いたチリソース。これにビーフボールをつけて食べる。このお店はリトルインディアエリアにある、Syed Alwi Rd. Gar Lok Eating Houseにあるその名もThe Beef House. 朝食にもってこいだ。ここには、ビーフボールの他に、牛筋ボールもある。<br />

シンガポールへ行くといつも過酷だ。1日8食は、当たり前。なので、最終日には、お腹にやさしいものが食べたくなります。ホーカーセンターには必ずある、経済朝食屋で、フライドビーフンとビーナッツ粥を食す。お粥とビーフンと麺は定番の朝食。殆ど具は入ってない。というのも、おかずは自分でチョイスする。ソーセージ、ランチョンミート、揚げた練物系、キャベツの煮込み、フライドエッグ、等。ここは、チャイナタウンコンプレックスで毎朝行列ができる、Chang Ji Gourmet. ピーナッツ粥は、干魚の風味があって、通常のより深みがある。ビーフンは、酸味の効いたチリソースで食べるが、やはり食感がいいグリーンチリが、好み。やはり、白胡椒パウダーは、お粥には欠かせないですね。ちなみに、ここのお店は、練物など、他の惣菜は、一切ない。下は、焼ビーフンです。なんでしょうか、ペペロンチーノのように本当にベーシックな味です。<br />

Satay Babi Goreng or simply satay babi is a humble Peranakan dish consisting of sliced pork, rempah (a peranakan version of mirepoix), coconut milk which is stir fried. Very simple yet incredibly satisfying but, I always wonder why the dish is termed "satay" (babi is pork in malay), when it is not skewered like the usual satay (why not babi masak lemak? i.e. pork cooked in coconut milk) nor does it taste like the usual satay. I do own a quite an amount of Peranakan cooking book but none of them explains how this name came about. Anybody heard of nasi jenganan? I've always spotted this at the stalls in Geylang Serai Food Centre but never really ordered it. So one day, I ordered a kuah jenganan at Hajah Mona Nasi Padang. As I ordered some of my favorite Padang dishes, the stall owner topped my one dish plate with the Jenganan gravy which is a thick sweet peanut gravy. Then I realized that if you happened to choose sweet Padang dishes, you end up having an incredibly sweet stuff. The rich gravy is thickened with mashed sweet potato (simple potato will do as well) and ground peanuts. The most memorable mee rebus is the one I had at Johor Bahru in the middle of nowhere, a restaurant called Restoran ZZ (pic below). It was like a cross between mee rebus and sup tulang (bone marrow soup)! The straw in the middle is of course for devouring the bone marrow. So when I had this, I thought of revamping the mee rebus with a good beef stock and use tender wagyu beef. Their robust mutton briyani is very very nice (pic below) served with sambar (it wasn't dalca) and raita or cucumber pachadi. But here, I found something very unique which I have never had it in Singapore before. I love roti prata but kothu or kottu prata, I've never eaten before. Apparently, the word "kothu" means "chopped" in Tamil, and the dish is exactly that, stir fried chopped roti prata with aromatic veggies, spices and egg (pics above and the 2nd one is what we made in our own kitchen). It is a common snack in Tamil Nadu and also Sri Lanka (known as kothu roti). Served without any gravy, it is filled with spice and has a great texture. It's actually quite filling so not recommended to eat with briyani if you are alone... But of course it tastes nice because you throw in the elements of Indian cuisine -tomato, chillies, cilantro, cumin seeds, ginger/garlic/onion, curry leaf, chaat masala. Curry Debal is a Portuguese/Malacca dish or otherwise known as Cristang cuisine. Ingredients include, chicken, roasted meat (such as pork or beef -usually taken from the Christmas dinner leftovers, hence usually eaten at Boxing Day), chillies, potatoes, cabbage, cucumbers, green beans and any other vegetables. Why devil? In Western culinary terms, the word devil means something that is spicy. However, here the word devil is an adaptation of the Cristang word "debal" meaning "leftovers". Celine J. Marbeck, in her lovely book, Cuzinhia Cristang, notes: "every Cristang kitchen had a set of tezalers or earthen pots such as the one in which this devil curry is served." The idea of serving curries in claypots or terracotta may have been introduced by the Portuguese where in Kerala (back then Malabar coast), many curries are made in terracottas.<br /><br />Curry Debal(又はDevil Curry)はマラッカのユーラシア料理だけでなく、シンガポールのユーラシアンの家庭料理だ。ポルトガルの影響なのかハム、チキン、ソーセージ等の肉類と沢山の野菜類、ジャガイモ、キャベツ、キュウリ、タマネギをごった煮にしたようなシチューっぽい料理だ。マスタードシードがアクセントになり、ほのかな酸味が赤唐辛子を和らげてくれる。一部のユーラシアンはポルトガル系であり=カトリックなのでクリスマスには、ふんだんに食べるローストハムやチキンを上手く利用し、カリーデバルを作るのだ。味はカレーというより(<br />(スパイスがカレーのように入らないせい)シチューに近い味だ。肉と野菜の旨味が出ていて美味。その昔、マラッカにはポルトゥギーズセトルメント(Portuguese Settlement)という村があり、そこには多くのユーラシアンが住んでいた。ユーラシアンにはポルトガル系、オランダ系、そして英国系がある。そしてポルトガル系が、クリスタン(Cristang or Kristang)なのである。その独特なポルトガル・マラッカのハイブリッド料理がこのクリスタンキュイジーヌという事だ。さて、なんでデビルカレー?西洋料理でデビルソース(又はソースディアヴォロ)は白ワイン、ビネガー、胡椒、カイエンペッパー、ハーブの入ったデミグラスベースのほんのり辛いソース(Larousse Gastronomique参照)。しかし、このデビル(devil)という言葉の由来はクリスタン語の"debal"から来ている。"Debal"とはクリスタン語で"残り物"という意味らしい。カレーに赤唐辛子が入って辛いことからdevil curryと名付けられた訳ではなく、クリスマスの残り物を使用して、主にボクシング・デー(12月26日)に食べるカレーだからなのだ。Shigeki Koshiba 小柴茂樹http://www.blogger.com/profile/10321540384492040816noreply@blogger.com0tag:blogger.com,1999:blog-7562839677710197704.post-23772161540389195202012-05-18T10:13:00.008+09:002012-05-19T08:14:16.823+09:00Nasi Rawon ナシラウォン<a href="http://3.bp.blogspot.com/-bbWoY8w6_fI/T7Wp2cA2acI/AAAAAAAAD1s/a1TyVXw2EYE/s1600/IMG_8473.JPG"><img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 303px; height: 400px;" src="http://3.bp.blogspot.com/-bbWoY8w6_fI/T7Wp2cA2acI/AAAAAAAAD1s/a1TyVXw2EYE/s400/IMG_8473.JPG" alt="" id="BLOGGER_PHOTO_ID_5743683652478724546" border="0" /></a><br />ナシパダン屋が大好きなのだが、殆ど行くお店にはメニューというものは存在しない。ショーウィンドウに並べられた数々のマレー系やパダン系のおかずを指でさして、注文する。味の想像が付かないとナシパダンを知らない人だと何をオーダーしていいのか困ってしまう(ナシパダンのオーダーの仕方は次回、ブログします)。ただ、最近ゲイランセライにあるマレー系のホーカーセンターでストール(お店)の看板を見ると、なんだか興味深いメニューを発見したのだ。Nasi Rawon, Nasi Ambeng, Nasi Jengenan。上の写真がNasi Rawonである。Nasi Rawonとは本来Rawonソースが降り掛かるセットメニューの事。なので、お店によっておかずの内容は異なる。ちなみに私は、セットではなく、自分の食べたいおかずを注文し、最後にRawonソースをかけてもらった。深いコクと風味豊かなサラサラなソース。そもそもRawonとは、インドネシアの真っ黒いビーフスープだ。その黒さの理由は、ブアケルアッというナッツ(写真した)。一見中身はオリーブのようにも見えるが、味も少し似ている。シンガポールのノニャ料理には欠かせない食材である。大きな蛤のような殻。このナッツのピューレとレモングラス等の香味野菜類で煮込んだビーフスープはライスにかけると格別だ。上の写真にはこの黒いスープがつゆダクでかかっている。<br /><br />Rawon is a robust black beef soup originally from Surabaya, East Java, Indonesia. How this dish came to appear in many of the Nasi Padang places, I do not know but it certainly is full of flavor. The soup's distinct black color is from the buah keluak nuts (pics below) which also happens to be an essential ingredients in Peranakan cooking such as Ayam Buah Keluak. It seems like the nasi rawon sold at stalls are like the set menu, which not only includes rawon but rice topped with other nasi padang dishes but those items depend from stall to stall. We love soft boiled eggs! Called Onsen Tamago in Japanese -literally meaning hot spring bath egg because originally eggs were boiled in hot spring bath and it was an ideal temperature to poach the egg in their shells (around 65℃). I would say that texture-wise, Singapore one is a little softer than onsen tamago. We also eat the soft boiled egg with dashi or we top them on top of lot of things -Japanese curry, yakisoba, donburi's, etc. It's actually one of my favorite breakfast when I am in Singapore (yes, i know I can make this at home but the experience is different), yet together with kaya toast and rich kopi, it is marriage made in heaven. Ya Kun Kaya Toast at Far East Square makes one the most beautiful soft boiled eggs in Singapore -just look at it! Though you end up mixing them all up... These kampong chicken was sold at one of my favorite super market in Singapore, Sheng Siong (Tekka Centre branch). Like I said earlier, there is no real kampong or free range chicken in Singapore. They are a specific breed of chicken raised like broilers. Yet general conception of kampong chicken is of course not broiler-method chicken but close to more organic chicken, I suspect. Interesting that the chicken is labeled female and male. There is a difference in taste. In Japan or elsewhere that I lived, there's never this distinction. Although I am not sure if this is a so-called free range chicken egg, it is a little bit smaller than the usual egg. Normally, people believe that brown egg is more superior than white egg but, the only difference is the breed of chicken that lays the egg. It seems like kampong chicken is pretty much readily available everywhere.Shigeki Koshiba 小柴茂樹http://www.blogger.com/profile/10321540384492040816noreply@blogger.com1tag:blogger.com,1999:blog-7562839677710197704.post-10135765932702042762012-03-10T16:35:00.016+09:002012-03-26T18:34:22.965+09:00Kampung(Kampong) Chicken カンポンチキン<a href="http://2.bp.blogspot.com/-JW9yyWSRaJg/T1sErN2YicI/AAAAAAAADwI/EnC02Wrp6E8/s1600/IMG_0659.jpg"><img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="http://2.bp.blogspot.com/-JW9yyWSRaJg/T1sErN2YicI/AAAAAAAADwI/EnC02Wrp6E8/s400/IMG_0659.jpg" alt="" id="BLOGGER_PHOTO_ID_5718169292375624130" border="0" /></a>実は、シンガポールは全く養鶏所がない訳ではない。私が色々AVAのホームページ(Agri-Food and Veterinary Authority of Singapore-シンガポールの消費者食品安全を確保するところ)で調べたが、シンガポールの養鶏所は10件にも満たない(離島のPulau Ubin を除く)。少し話しは、それるが、シンガポールでは4百万個の卵が1日に消費されていて、その23%がシンガポール産(結構驚き)。それ以外、シンガポールへの輸入が認められている国は、西マレーシア、オーストラリア、日本、アメリカ、韓国、スエーデン、そしてニュージーランドだ。しかし、これも色々な状況ですぐに代わり、輸入が禁止される事もある。シンガポールには養鶏所は少ないが、マレーシアのみAVAが指定した養鶏所に限り、鶏が生きた状態でシンガポールへ輸出する事が認められている。そのAVA指定の養鶏所はマレーシアに2012年3月13日現在で129舎存在する。これらはいずれも生きた状態だ。しかし、それ以外の鶏は全て冷凍でシンガポールに輸入されているという事だ。2012年3月現在、冷凍鶏の輸入が許可されているのは、オーストラリア、ベルギー、アルゼンチン、ブラジル、中国、フランス、ドイツ、ハンガリー、マレーシア、ニュージーランド、台湾、タイ。その大きな理由は、チルドの鶏=多くの細菌からなる食中毒のハイリスクがある為だ。近年の鶏インフルエンザの影響で、いわゆる健康を意識する人たちに指示されているフリーレンジ鶏(放し飼いでより自然な環境で育ったストレスフリーな鶏・例:フランスのブレス鶏、Free Range Chicken)はシンガポールに存在しないという事をAVAのホームページを見て知る。それは、AVAが放し飼いの鶏をシンガポールへ輸入を認めないからだ(2012年3月現在、シンガポールでは鶏インフルエンザのアウトブレイクは無い)。お隣のマレーシアから輸入されている鶏も例外ではない。さて、シンガポールにはカンポンチキン(Kampung or Kampong Chicken)をチキンライスに使用しているというお店が結構ある。カンポンチキンのイメージはその放し飼いでストレスフリーな環境で育った鶏(カンポンとはマレー語で村/Villageを意味する)。その鶏は脂肪分が少ないのでヘルシー、そして肉の味が濃いという特徴を持つ(しかもあるチキンライスは使用しているカンポンチキンは、フリーレンジとまでホームページにのせている)。そもそも、このカンポンチキンはフリーレンジと言っておきながら、ブロイラーと同じ方式で養鶏されているのが現状。それは放し飼いにすると鶏インフルエンザのリスクが非常に高くなるからだ。シンガポールの国内産でも同じ事で、AVAは放し飼いの鶏についての養鶏・輸入・売買を一切認めていない。シンガポールでウェットマーケットやチキンライス屋で売られているカンポンチキンは本当の意味のカンポンチキン(放し飼いの鶏)ではなく、その品種の事をいう(別名:red chicken)。定かではないが、フランス産の鶏とブロイラーの掛け合わせという事をきいた事がある。<br /><br />写真上:カンポンチキンをウリにしているChicken Houseというチキンライス屋。鶏の皮は黄色が強く、肉は弾力がある。カンポンチキンはどうあれ、ここのチキンライスは結構人気が高い。<br /><br />Do you know what kampong chicken is? And if you do then, what defines kampong chicken? That differs whether you live in Singapore or in Malaysia. Since this is a Singapore food blog, I will refer to the one in Singapore. There are chicken rice places that market themselves by selling kampong chicken. Mass conception of kampong chicken is probably this (I wouldn't use the term "organic" here because there is no universal definition): leaner and healthier type of chicken which is free range as opposed to broiler chickens. They are simply leaner because they are free range and are not raised by the usual conventional method (like broiler chickens).<br /><br />First of all, from where does Singapore get their poultry? I have intensely browsed through AVA (Agri-food and Veterinary Authority of Singapore) website and actually, these people were even kind enough to respond to me if I had any further questions regarding poultry -they were fast and efficient. Singapore does have a poultry farm at restricted places. But because of the avian flu issue, there are no guided tours at these poultry farms and places are strictly restricted. Apart from local poultry farm, live poultry can only come from AVA accredited poultry farm from Malaysia (as of March 2012 there are 129 accredited poultry farms). Chilled poultry is strictly prohibited as of now according to my email exchange with AVA officials, all must come otherwise frozen. AVA approved frozen poultry (chicken) come from: Australia, Argentina, Belgium, Brazil, China, France, Germany, Hungary, Malaysia, New Zealand, Taiwan, and Thailand. Recently, I emailed AVA, whether it is possible for me to buy frozen free-range chicken in Singapore. The AVA officials kindly informed me that: "overseas meat establishments are accredited based on the animal health status of the country and the conditions (such as the production flow, health control & etc) of the establishment. As such, we regret to inform that we are unable to accede to your request for the country of supplying free range frozen poultry"(23 March 2012).<br /><br />Live poultry can only come from West Malaysia and nowhere else. To date, AVA does not approve any so-called free-range poultry from W. Malaysia (or anywhere else) meaning, if the definition of kampong chicken is free-range then live kampong chicken (or frozen ones from other accredited countries) does not exist in Singapore. Even the local poultry farms cannot raise their poultry free range. Farmers and residents at Pulau Ubin (one of Singapore's islets) were asked to remove all free range poultry in June 2005. All bird needs to be caged to prevent direct contact with wild birds. I guess, if they are caged but have an ample space to roam around restricted area, then I guess that is almost like free range except they do not get enough sun light like the outdoors... and must feed on what the farmers give as a feed, but it's difficult for me to say if the raised poultry are in such condition in W. Malaysia -it may not make good sense to the farm owners who are capitalism driven. Hence, I don't understand how one of the major chicken rice chain of stores on their homepage could state that "free range chicken served here are lean and healthy" -that's quite a statement.<br /><br />So when you see "kampong chicken" at the restaurant, wet markets or anywhere else, remember they are not really "free range." But then what is it? It is only a specific breed of chicken known in the market as "the kampong chicken". Anyhow, if you are indeed looking simply for lean and healthy chicken option, eat kampong chicken although as far as I understand, are raised like broilers. (ショージィエ・クレイポットバックッテー)。ここは広東風のバッ・クッテーを専門にしているお店だ。私の調べたところでは、広東風は漢方薬が効いているということなので、そこに注目した。ここのはにんにくと白胡椒がテオチュウ風と比べるとすごく微量だ。うっすらと薄茶の透明なスープは濃いホッケン風でもない。ただ、漢方という面ではよく似ているが、全体的に広東はやさしい味がする。甘さもホッケンと比べて、非常に控え目だ。ちなみに浮いているのはクコの実だ。食べ方は、他と全く変わらない。ユーチャークエ、白米そして濃口醤油にスライスチリ。にんにくの風味が好きな人には少し物足りないかもしれないが、やはり、ポークリブスープはどのスタイルでも飯が進む、この世で最高の朝飯だ。中国茶との相性も抜群だ(これが無いと何かもの足りない)。<br /><br />I've finally found a place that serves Cantonese style herbal bak kut teh. Teochew and the Hokkien bak kut teh are popular and well acknowledged with the locals but I am not sure if even the local people have an exact idea of what Cantonese style bak kut teh is. Although, I myself is frankly dubious that having just one bowl of Cantonese style bak kut teh equals "I know what it is all about." Anyways, it was a lot of searching over the internet to find this place at Telok Blangah Dr. Food Centre. 秀姐砂煲肉骨茶・Xiu Jie Claypot Bak Kut Teh. The soup comes in claypot and as you can see, there are wolf berries floating (and also angelica sinensis). The soup is not as dark as Hokkien like Morning BKT Hong Lim Complex but darker than the Teochew type like Rong Chen or Joo Siah but equally dark as Ng Ah Sio or Song Fa. Flavor-wise like defined, it is quite herbal and not garlicky or peppery at all. Not as sweet and robust as the Hokkien one but equally herbal -pronounced angelica sinensis root aroma (当帰). This sensation is similar to eating a nice juicy rib-eye with a tannic red wine like Zinfandel and I am very sure there are scientific reason behind tannins (polyphenols) and fat solids. When I am at a bak kut teh shop, I like to spend a tranquil time with gong fu tea brew -almost zen like experience thinking nothing but the soup and the tea. Purist that I am, I acutally do not drink anything else with bak kut teh, if I have no choice, maybe the Oldelandia water or a lame chinese tea bag. Just like I do not have sushi with coffee -a rule breaking odd combination, I cannot comprehend when a young guy at a bak kut teh joint sipping pork rib soup together with Ribena. Actually I was shocked to see such a sight. The first instant noodle was named "Chicken Ramen" But this instant noodle was not the cup-ready-to-go noodle but a packaged one where you put the noodle in a bowl and pour hot water. Through advanced research and trial and error, the incredible mega-hit cup noodle was out to public May 1971. The price back then was 100yen when a price of packaged instant noodle was 25 yen. You can still buy it for less than 150yen after 40 years! I often do not eat instant noodles in Singapore because I cannot waste my appetite on something like fast food or instant food but I bought some at the airport and flew it back with me. First one up is Nissin's (a company that made instant noodle) Chilli Crab flavored Cup Noodle. It comes with a spicy chilli packet which tastes more or less like nam prick pow -the ubiquitous Thai condiment. The rest is like a regular cup noodle with freeze dried surimi stick. This is made in Singapore but it does not taste anything like chilli crab. What were the R&D people at Nissin thinking? Next one up is Myojo (another Japanese instant noodle company) mee siam. How would you describe the flavor of mee siam sold at food centres? There's that similar flavor be it Nonya version, Malay version or Indian version -slightly tart, sweet and spicy and the hae bi or dried shrimp giving that richness and complexity. None of those in this instant one. It also came with the same flavoring nam prick pow like the chilli crab flavored cup noodle. It also contains freeze dried cabbage and green onion, I believe. I just don't know how anyone could sell this as a mee siam. But do not get me wrong here. margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="http://3.bp.blogspot.com/-5vM8R0VwKkM/TpPEajYzw4I/AAAAAAAAC_c/Qh2z4IvfZ1Q/s400/IMG_5017.JPG" border="0" alt="" id="BLOGGER_PHOTO_ID_5662085116989784962" /></a>シンガポールのホーカーセンターで唯一気に入らない事がある。もちろん全てのお店がという訳ではないのだが、薄いプラスチックで出来ているレンゲ、スプーンとフォークや発砲スチロールで出来た皿とボウル。皿とボウルはまだ許せるかもしれない。特にスープを飲むためのレンゲはあのペラペラなプラスチックだと許せないのだ。「食感」というのは実際、「味」ではないが、「食す」という行為でもかなり重要なファクターだと私は思っている。ボルドーワインをちゃんとしたボルドー用のグラスで飲むのと、ペラペラなプラスチックのコップで飲むのでは味がまったく違ってくるではないか。あの薄いグラスのリップの部分が分厚いと味に影響が出ると思う。最近はやりのうすはりビールグラスなんかも一緒の考えだ。本来、衛生面を考えて、このようにしてしまったところが多いのだが(特にニュートンサーカスのフードセンター)、「食」そして「エコ」をもうちょっと考えてもらいたいものだ。やはりこれからは「マイ・レンゲ」をホーカーセンターへ行く時は持参する必要があるようだ。<div><br /></div><div>Disposable utensils at hawker centres should be banned. Of course there are environmental reasons behind this but for me, the primary reason is: paper thin plastic Chinese style soup spoon does not have the right texture when you sip a soup out of it (just one example -I also don't like styrefoam bowls and plates). You get a very good soup like fish soup and or laksa and simply bastardize it with an improper utensil. The non-disposable plastic one is sufficient but the disposable kind is simply not acceptable. So, from now on, I will carry my own soup spoon for a better dining experience. The expeience is as bad as drinking a good Burgundy Pinot with a styrefoam cup. Say "no" to disposable utensils. The utensil's texture plays an important role in tasting food and this is the fundamental rule for good food. On a different note, I had my condiment saucer (soy sauce and chilli padi) flown pathetically by an electric fan at a hawker center because it was made from disposable plastic. Mee Goreng (Indian style fried noodle), Sup Tulang (bone marrow soup), mutton steak (sauteed chopped mutton with spices), mee kuah (egg noodle with starched mutton gravy) and the list goes on. What I noticed not recently but from long time ago is that, Indian muslim (mamak) chefs love using red coloring. Some may argue that the red coloring comes from spices but I doubt it. Something so brightly red cannot depend solely on chilli powder. Red color is a special thing for Indians; take a look at those Tandoor chickens with bright red coloring. I asked my Indian friend why the red color. Is it a lucky color or do they add it to make it more delicious (which does not impress a Japanese like me). He couldn't answer so I guess a lot of people take this "red coloring" as a given already. I read somewhere that "red" excites tastes buds in Indian culture. Persian version (which current North Indian cuisine got its most influence from during Mughal rule) of tandoor chickens is not red though. They are simply marinated in yogurt with few other ingredients. But with all these red colors in mee goreng, mee kuah, sup tulang, etc. why is it that sup kambing is not red?
