Jalan Kayu Roti Prata



Why is Jalan Kayu (meaning "wooden road" in Malay) famous for Roti Prata -the Singaporean Indian Muslim flaky flatbread?  I spent almost $16SG taxi ride for a $1.50 roti prata the other day just to learn what the hype is all about.  The one who claims to be "the" original prata shop at Jalan Kayu apparently is Thasevi Food which is open 24 hours and boasts a menu of more than 16 different type of pratas.  Their usual prata is not the ultra crispy type like the Casuarina Curry Restaurant but nice and chewy.  The photo above is their cheese paper prata which is thin and crispy but not too oily.  The gravy is a mutton based gravy which is pleasant enough but they also have a coconuty chicken gravy (they gave it to us complimentary) which is milder.  Nice pratas but honestly, it is one heck of a trip.  I was wondering why they don't have a vegetarian gravy like sambar but roti prata contains egg in the recipe, so I guess the flatbread itself is not a vegetarian deal.

シンガポリアンにジャラン・カユ(Jalan Kayu)で何を連想するのかと聞くと「ロティプラタでも食べるのか?」と答えるに違いない。中心部からタクシーで20分のジャラン・カユはロティプラタのお店の激戦区である。タクシー代に16ドルもかけて$1.50のロティプラタを食べに行くのはなんだかおかしな気もするが、とにかく一度ジャラン・カユがどのような場所なのかを知りたかった。シンガポールの道案内ポータルサイトstreet.directory.comによると、この道は1928年に英国空軍によって作られたそうだ。北部セレター(Seletar)にある空軍ベースから中心部へのアクセスの為に作られたそうだ。1960年から活気づき初めて、この頃からロティプラタ屋が増えて行ったそうだ。元祖ジャランカユのロティプラタといえば Thasevi Foodのロティプラタ屋だ。ここはクリスピータイプではなく、もっちりタイプを売りにしている。付いて来るカレーグレービーはマトンベースでコクがある。ここでは薄焼きにしたペーパーチーズプラタを食した。クリスピーな仕上りだが油っぽくない。疑問に思っていたのだが、ロティプラタ屋にはチキンやマトンベースのグレービーが付いて来るが、ベジタリアングレービーを見た事がない。ベジタリアンが比較的多いシンガポールでなぜか?それはロティプラタのレシピに卵が入っていて、もともとベジタリアンの料理ではないからだ。プラタはおそらく、ケララの同じようなフレイキーな形状のフラットブレッドであるポロタ(porotta)から来ているのではないかと考える。ただポロタという言葉自体はヒンディ語の"paratha"から来ている。Paratha (パラタ)もチャパティのようなフラットブレッドだ。ちなみにパラタの"atha, アタ"はヒンディ語で小麦粉を意味する。
