Singapore Indian Part 2: Sup Kambing (Mutton Soup)




When I hear the word "mutton soup" 3 dishes with different ethnic orientation come to mind:  Hainanese mutton soup, Teochew mutton soup and Indian Muslim mutton soup.  This Indian mutton soup is yet another Singapore Indian dish (Sindian?) which is a late night snack eaten with sliced baguette.  The soup is flavored with lentils and hint of spices like coriander powder, cloves, black pepper, tumeric and cardamom (I am guessing), sprinkled with chopped cilantro and deep fried shallots.  This is like a nice comfort food that one could have after clubbing -not too robust but quite soothing.
シンガポールでマトンスープというと3つタイプが存在する。海南風、潮洲風そしてムスリムインド風だ。このムスリムインド風のマトンスープはインドにはない料理だが、似た料理はあるだろう(マトンとダル豆のシチューであるダルチャに良く似ている)。しかし、このマトンスープまたの名をスップカンビンは、ライスやフラットブレッ(ナンやチャパティ)と食べるのではなく、シンガポール特有のバゲット(又は、roti perancis= rotiはパン、perancisはフランス)と一緒に食べるのである。スープは多分、コリアンダー、クローブ、黒胡椒、ターメリック、カルダモンで味付けされていて、かなりあっさり目でスパイスは控え目に感じる程度だ。スパイシーではないのでチリパウダーは入ってないだろう。トッピングは揚げネギと香菜だ。
