Lor Mai Fun 糯米飯 @ Niu Che Shui Famous Glutinous Rice

ローマイファン（糯米飯）はもち米でつくった日本でいうおこわのような食べ物だ。そして、常に行列が耐えないお店として有名なのが、チャイナタウンコンプレックス(Chinatown Complex)にあるNiu Che Shui Famous Glutinous Riceだ。余談だが、このお店の牛車水（ニゥチィシュイ、ホッケン語ではグゥチャチュイ）とはシンガポールのチャイナタウンを意味する。MRT（シンガポールの地下鉄）の駅でも牛车水と中国語と書かれ、そして英語ではChinatownと書かれている。何故、唐人街ではないのか？それは、19世紀にこのエリアは水道がなく、Ann Siang HillやSpring Streetの井戸から(参考：National Library Board Singapore）水は牛車によって運ばれていたからである。さて、このローマイファンだが、このようなシンプルな料理になぜ長蛇の列？と思う程、簡単な料理だ。ピーナッツと一緒に蒸されたもち米に揚げたネギをたっぷり乗せて、薄口醤油で味付け。これだけである。やはり、シンガポールの人もシンプルイズベストな物を好むのであろう。シンプルで旨い！安い！でも遅い。牛丼のようにはいかないという事だ。ポーションによって価格が異なる$1.20, $1.50, $2.00。しかし、ここのおっさんたちチームワークの良さと動きが素早い事。勉強になります！ちなみに、ここはマカンスートラガイドで満点を取っているお店だ。

Lor Mai Fun is a simple rice dish made from glutinous rice and peanuts, topped with deep fried shallots and floss? and with a dash of light soy sauce. Directly translated, it means bull cart water -meaning bull powered cart that transports water, in Malay it is known as Kreta Ayer (and there is a road with such name near Chinatown in Singapore). Chinatown in Singapore is known as Niu Chi Shui in Mandarin. When you check out the Chinatown MRT station, it is written Chinatown but the Chinese character has nothing to do with Chinatown but this "bull cart water". Why is Chinatown known as bull cart water? According to the National Library Board of Singapore, in the early 19th c., water was brought to that area by bull carts from the wells of Spring Street and Ann Siang Hill and hence the name. Back to Lor mai fun, the sticky rice is not mushy and as you can see from the photo, the individual rice grains are unmistakable and very glossy. The price is nice! $1.20, $1.50, $2.00. The other reason worth visiting this stall is to check out these old uncles into action. They move like a teenager....
