Teochew Braised Duck (Lor Ark) 潮州鹵鴨

So this is the real deal -Teochew Braised Duck, Ah Seng Duck Rice at Serangoon Garden Way.  Masters at work, the sauce is ethereal with garlic and spices coupled with a juicy chewy duck. It totally blows my experimental Teochew duck to high heavens and I am embarassed but will humbly admit it -my duck does not come even close.  The sauce here is not the gooey type.

潮州鹵鴨（ロー・アーッ） の最高岬とも言われるセラングーンガーデンウェイの「アー・セン・ダック・ライス・亚盛卤鸭饭」。この料理はマリネした鴨を特性のスパイスブレンドとにんにくで煮込んだ潮州の代表料理といえる。広東のロースト鴨もおいしいが、これも最高に旨い。酸味の効いたチリソースで頂く。余談だが、セラングーンガーデンウェイは中心部から大分遠いが、老舗が結構ある‐あのロティジョン(オムレツと挽肉をバゲットに挟んでチリソースで食べるスナック）のを始めたシュコー（Shukor)やクエイチャップで有名なブランコ・コート・ガーデン・ストリートもある。
