Crab Beehoon Sin Huat 螃蟹米粉





シンガポールの食通の間でにわかに人気を集めているのが、クラブビーフンだ。タイプも様々で、蒸したもの、煮込んだもの、スープタイプ、ブラックペッパータイプ、XO(ブランデー入り)タイプと様々で、シェフはその発想力で勝負している。その中でも遅い・高い・旨いの三拍子そろったグラブビーフンはシンフアットシーフードレストランのクラブビーフン。1996年シンガポールで開催されるフードアジアのコンペティションで銅メダルを受賞。養豚場をやっていた、ダニー・リー氏がいきなりのキャリア転換。とにかく、蟹そのものの旨さとビーフンを煮込む出汁の旨さがポイントだ。具はいたってシンプル:ネギ・生姜・チリ・しいたけ・揚げネギ。その辺のビーフンより少し太めな麺が出汁を良く吸収していて旨い。スリランカ蟹は大きいだけでなく、甘味と旨味がしっかりしている(もちろんメスだ)。海南鶏飯食堂麻布店の松本店長が蟹の甲羅の大きさにびっくり。まるでフリスビーだ。しかし、3人で会計は$200。シンガポールにしては高い。しかも店はどう考えても綺麗ではない、が需要があるのでいいのか。ちなみにスリランカクラブの現物は写真下。Sin Huat 2 に続く…


Crab beehoon dishes seem to be a growing phenomenon among chefs in the last few years. Many new crab beehoons seem to be sprouting here and there. Sin Huat Seafood Restaurant's crab beehoon truly has its own identity. Very run down coffee shop, not that crowded as I thought it would be but took very long to take our orders. No customers except us but things take time here but hey, we japanese are quite patient when it comes to waiting for something good. The price -as everyone knows, very high; I ended up paying $200+ for crab beehoon, gong gong (shellfish), and pepper crab for 3 persons. Quite close to what I paid at Song of India, a renowned posh Indian Restaurant on Scotts Rd. But look at the size of crab shells -looks like frisbie. Whenever I crave for crab(female with lots of roe), which happens once in a decade, I will place a visit. For those of you unfamiliar with Sri Lanka Mud Crab, checkout the photo above. ティオンバルは今現在、完全に新しくなり、前のワイルド感は無くなっている。しかし、周りの建築スタイルに合わせる為、アールデコ調なフードセンターに衣替えだ。日本と違い、ちゃんとした都市計画に基づいている。さて、ここは特にローミー(卤面)が人気だ。ローミー(グレービーヌードル)はドロッとした豚骨・海老ベースのソースに、かまぼこ・サメのナゲット・もやし・煮豚・ゆで卵・にんにくみじん・アクセントに黒酢を好みで入れる。この黒酢がドロッとしたソースに良く合うのだ。麺は2種類のものが入っているー卵麺にビーフン、このコントラストがまたたまらない。スパイシーなサンバルソースもアクセントになっている。ちなみに、ローとは、福建・潮州語でグレービーの事である。

Nasi Goreng Malay Style



本日、海南鶏飯食堂は第三月曜によりお休みなので、スタッフミーティングの後、ホールスタッフと一緒にマレー風のナシゴレンを作った。普段キッチンに凄い興味があるので、会議の後、クッキング教室を先月から始めている。尚、マレー風ナシゴレンは、発酵した網エビのペースト(ブラチャン)とチリソースが味のベースとなる。具はシンプルにエビ・キャベツ・赤ピーマン。ライムを搾っていただく。シンガポールには3種類のナシゴレンが存在する‐中華・マレー・インド。中華は醤油ベース、そしてインドはキャベツ・グリーンピース・マトンが入っていてとにかく赤い。が、プテといえば、赤くないバージョンも作ってくれる。

What constitutes a Malay style nasi goreng. I guess the belacan? I really am not 100% sure but it does taste good. Chinese style uses soy sauce right? Indian Style is just like Mee Goreng substitutin rice instead of noodles (although there is the putih (non-red) version at times, shown above (Nasi Goreng Putih Ikan Bilis). Well, this one I made uses belacan, chilli sauce, shrimp and chillis garnished with fried shallots and lime wedge -this combo, you can't go wrong.

Popiah 薄餅



シンガポールの春巻、福建ポッピア(薄餅)を作った。ちなみに、春になると野菜がふんだんに市場に出回るので、春巻というらしい。皮はほとんどクレープの生地と変わらない。具はもやし、キュウリ、揚げタマネギ、にんにくミジン、もやし、錦糸玉子、レタス、切干大根と豚肉と筍をタウチオ(味噌)と炒めたもの。塗るペーストは自家製チリソースと海鮮醤。チリソースがアクセントになり、クセになる逸品。シンガポールでは日本でいう、手巻き寿司パーティーのようにポッピアパーティがある。

My first attept at making Popiah from skin. I think it went fairly well. Jicama or bangkuang is not readily available in Tokyo so I substituted with dried shredded daikon (known as kiriboshi daikon) which turned out much better than expected -braised with minced pork, bamboo shoots and Taucheo.

Bak Kut Teh @ Ng Ah Sio Pork Rib Eating House 黄亞細肉骨茶餐室


シンガポールに初めて来たのは、30年以上前。当時8歳でシンガポールは今とは全然イメージが違う、のどかな町だった。肉骨茶を食べるたびに、30年前の記憶がよみがえる。 さてここ、ラングーンロードに有名な肉骨茶(バークッテー)屋がある。肉骨茶とは、ポークリブ、白胡椒、にんにくのスープ。それを白米・揚げパン・鉄観音と一緒に戴く、シンガポールの国民食である。ここのはスープがクリアなので潮州スタイルだ。6年ほど前、ここを訪れた時に、お店のポロシャツを是非譲ってほしいと申し出たら、すんなり、譲ってくれた。おまけに厨房にまで案内され、感激!


My first encounter with BKT was when I first came to Singapore at the age of 8 with my dad. We were here for a month every summer for 3 consecutive years! And those childhood memories still come to full life when I have a bowl of Ng Ah Sio's BKT @ Rangoon Rd. Yup, I also find this place pricey but I just can't resist. One day, I offered to buy their polo shirt and they quickly replied yes. So, my friend and I wore it right at the restaurant and they kindly showed us the inside of their kitchen. Now that was quite an experience!
