Humble Japanese, trying to de-mystify Singapore cuisine and food culture. This is not a restaurant / stall rating blog.

My Pulau Ubin Experience 烏敏島
If you are not a Singaporean, you wouldn't think Republic of Singapore is made up of over 60 islands. Of course the main island being the Singapore city and the tourist attraction island being Sentosa. There's another island with easy access and the locals go there for cycling and fishing called Pulau Ubin meaning "granite island" in Malay; just 20 minutes from Changi Ferry Termial. Well, I was not there for picnic nor cycling. I came here for Lontong just near the ferry terminal at Ubin, called Pak Ali Coffee Shop which Makansutra raves about. Only on Sunday's do they serve a home style lontong, served with coconut gravy and garnished with cabage, deep fried tofu, boiled eggs and green beans. Topped with sambal goreng but no serondeng (aromatic toasted coconut toppings). I must say the lontong was very humble and comforting. The cafe had a kampong feel (very relaxed suburb style).
ゴンドラから撮った、セントーサのカジノプロジェクト。世界同時不況で工事がどことなく遅れているような気がする。東京ドーム何十個分あるのだろう。 The Sentosa Casino Project is simply extravagant.

Ramly Burger @ Singapore Railway Station

As an afficionado of burgers, I've always wanted to try Ramly Burger -the ubiquitous Malaysian hamburger using the Ramly burger patties -beef, chicken and seafood (I believe that the brand coming from Malaysia, are certified halal). Well, since I frequently visit Singapore, I had to find out (if at all) where the Ramly burgers are sold. Ramly burger chain of stores is quite interesting because the stall (unlike the Mc Donald's eat-in shop) that sells this Ramly burger is not owned by Ramly (maybe some of them are -I do not know), but the majority is just a burger stand that buys patties from Ramly and cook them accordingly. What differs Ramly from the ordinary burger joints is that the sauces are Asian, -with some chili sauce, some Maggi sauce, mayo and sprinkle of curry powder. The frozen patties are heated up and wrapped with thin omelette together with the sauce so that the sauce stays intact -quite brilliant. So, through the internet, I found out that Ramly burger is sold at Singapore Railway station (nice piece of colonial architecture) near Tanjong Pagar. The stall starts operating from around 4-ish. I went there at noon and sadly, they were closed, so I had to return back during the nite. You get a choice of beef or chicken so I chose beef. I watched the women dishing up my Ramly right before my eyes and it was like being at a teppanyaki joint. As with Mc Donald's the Ramly patties didn't do much for me but taken together with the sauces plus the richness from the egg, gave a nice complexity. It was like eating a tacos burger. Apparently, the Ramly burger wrapped with a sheet of omelette is called "Ramly burger special." It was indeed a pleasant junky surprise.

Epok Epok Sardine (Sardin) Telur @ 786 Merpati Puti
Which came first, epok epok or curry puff? In order to find the true facts, I need to go to great lengths to find the information. I do utilize the National Library but most of the time, my questions aren't answered but I end up with more questions (which is a
good thing). Someone has to publish a book on "Historical Dictionary of Singapore Food." Perhaps Makansutra could do something about it, if they want to boost the dying hawker culture -preservation based on true facts are necessary and they will form as a foundation of true food culture. So, I had the epok epok which is basically, stuffed deep fried dough like the samosa of India. Geylang Serai temporary market (wet market for the malays) has a lot of stalls that sells epok epok and curry puff. I purchased the one which Makansutra recommended since I do not have any information whatsoever on epok epok -786 Merpati Puti (which could be translated as white pigeon -good luck?)I ordered the one with canned tomato sardine (pics below) and boiled eggs. The dough is nice and crisp and the stuffing, you can't go wrong. It sort of resembles a Sicilian dish if you add some fennel seeds or chopped fennel or even olives and capers. Actaully, this epok epok is so versatile you could basically put anything in it so long as the outside is nice and crisp. Just a thought: lots of malay term repeat itself don't they? Like epok epok, otah otah and onde onde. Can't these dishes be simply called epok, otah or onde? I find it very interesting.

Soto Ayam 香辣的鸡肉汤
Soto Ayam, like any other chicken soup, is truly a humble dish and a comfort food. But to make this dish from scratch, you need patience because you can't make it in a flash like stir-fried dishes. While you extract the goodness from the chicken and spices (coriander, clove, cardamom, star anise), you need to work on potato-beef paties aka bergedel or pergedel daging -a wonderful dutch addition to this fabulous soup of Indonesian origin. This bergedel is very similar to Japanese style croquette minus bread crumbs. I used to buy freshly deep fried beef&potato croquettes from a meat vendor when I was a kid for a snack -brings back good memories.
