Chicken Rice Authenticity
I have been collecting data of Singapore food since 12 years ago and found out that I have visted 60+ chicken rice stalls in Singapore. These are of course recommendation by my friends, by some foodie blogs and also the ultimate guide: Makansutra. I don't know how many of great places to eat chicken rice exist now but I do frequent few stalls that I am comfortable with, they are delicious but within my vicinity. My notes are simple, why is this chicken rice particularly good, why is it special and if I were to change some things, what will it be? Plus of course I note on the rice, the sauces and the chicken and sometimes gravy. When I go back to Tokyo, the first thing I do is, I eat chicken rice at my joint and check to see if we are on the right track -I think we are, fortunately. BTW, if you can guess the name of the chicken rice stall of top foto, you know what's up.
Through people's blog (mainly Japanese ones of course), I often witness a comment that says: the chicken rice at Hainan Jeefan Shokudo is close to the ones in Singapore. "Close to the ones in Singapore?" But what exactly is an authentic chicken rice? I just want bloggers to clarify the authentic taste of chicken rice before jumping to conclusions.
My conclusion is that chicken rice is pretty much a food that has many variations and flavors are diverse. I don't think there is one true definition of chili sauce -ex. Boon Tong Kee has quite a sweet note but Yet Con is more like flavored Chili Boh etc. This extends to rice, gravy and chicken -textures, flavors, doneness -they all depend on the stall's philosophy. If they don't serve ginger sauce, will it seize to be an authentic chicken rice or vice versa? If the stall pours gravy on the chicken, will it seize to be an authentic chicken rice? You decide.
People in Japan who have travelled to Singapore (tourist) tend to standardize chicken rice authenticity with Chatter Box's chicken rice (but chicken rice is not all about Chatter Box). Expats who have lived or who live in Singapore do the same but they prefer Tian Tian and Wee Nam Kee (likewise chicken rice is not all about those outlets either). So generally speaking, if the taste is not up to par with those outlets, they tend to categorize chicken rice served in Japan as "not authentic" or close. I myself am aware of the diversity in flavors of chicken rice served in Singapore after visiting so many so I enjoy that difference and in my book, they are all authentic in their own way. What matters is, does it taste good?

Tian Tian Hainanese Chicken Rice @ Joo Chiat
At last, Tian Tian Hainanese Chicken Rice from Maxwell Food Centre, opened its flagship shop on Joo Chiat Rd. Tian Tian's chicken rice is loved by both locals and tourists and if you google it, you'll know how incredibly famous they are. During my visit to Singapore, early April 2010, I was fortunate enough to try this completely new Tian Tian with the Makansutra posse.
Because nearby, there's a star players like Boon Tong Kee and Five Star, their menu also have a wide range of cze char dishes.
Tried their Hainanese pork chop with very light gravy.
And to accompany our chicken rice, chap chye (mixed vegetables).
Very modern decor with aircon comfort.

Vegetarian Chicken Rice
If you are a vegetarian, why would you like to eat mock-chicken, pork, eel, etc? This should bring out a huge debate which will be quite interesting. After seen a sign saying "every saturday vegetarian chicken rice" at Bedok, I was very curious with this vegetarian chicken rice dish. After some search thru google, I found few places that serve vegetarian chicken rice. The chili sauce tasted like a usual chili with acidity and ginger, the chicken is made from tau kee or yuba or beancurd skin. For added depth it is probably drizzled with mushroom sauce (mock oyster sauce). The texture does remind you slightly of chicken and the flavor is not bad at all. Finally the rice; they've done a good job maybe using scallion oil, garlic and ginger. The rice is al dente and actually quite yummy.

The 3 Swee Kee 瑞記 @ Seah Street: 瑞記とは?
The taste of Swee Kee captivated the palate of many Singaporeans as well as non-Singaporeans. The impact is huge to the point that the flavor is now a nostalgia, like grandma's cooking. There are many styles of chicken rice now and the traditional chicken rice is becoming less common. Young people's palate is changing but people who have tasted Swee Kee can always relate (or trip back to the good old times once they taste the traditional style chicken rice) to the good old times. I don't know if this is a good analogy but, in Japan, there are so many new instant noodles coming out every week. But if you look at the statistics, what usually sells most is the basic Cup Noodle by Nissin. More competion but still the basic Cup Noodle sells the most even though people's palate is changing. Also in Japan, the ramen noodle trend is towards super robust soup combining pork bones, chicken bones and dashi simmered for days. Yet, these ramen shops do not last for decades. The ramen noodle shop that stood the test of time is teh ramen with very simple and yet subtle soup base -very light in flavor but has depth and their styles never change whether the trend changes or not. And those are the places I usually go now for pure pleasure (I check out the new ramen shops only because I am in the food industry). For certain type of dishes (not all), nobody is expecting a change and it is wise to not change things.

Types of Chicken Rice
I wonder how many types of chicken rice exist in Singapore. Steamed and roasted are very common but here I have listed some other unique types.
Chicken Rice Ball: I've learnt that chicken rice ball came before chicken rice. This classic style was sold long time ago in the early 20's by a guy named Wang, wrapped in banana leaf near Hylam Street. Strangely enough, this rice ball is somehow a regional cuisine in Malacca.
Soy Sauce Chicken: I have tasted this at Lee Fun Nam Kee. The gooey gravy is flavorful and very tasty. Personally speaking, I think the strong flavor destroys the delicate aroma of perfumed chicken rice's rice.
Kampung Chicken: Some vendors of chicken rice market themselves using kampung chicken or free range chicken; now is it really free range? If it were true free range chicken, the meat should be tough but flavorful. And because of this particular breed (or it could be because of the feed), the skin has a darker yellow hue. I have yet to try a particular breed known as "sakura" chicken. What's the hype all about?
Hainanese Style: This is a classic chicken rice from Yet Con at Purvis Street. Foodies refer this as "old school." The Hainanese one uses older chicken and there's no gravy.
Cantonese Style: The cut is beautifully presented and it comes with gravy and garnish unlike the Hainanese style. The chicken is also cooled in a waterbath for better texture.

Vegetarian Chicken Rice: Only on Saturdays
When I visited Bedok South Rd. Food & Market Centre, for the legendary famous char kway teow (it was closed), I saw a curious signboard written "vegetarian chicken rice." What da?!? Too bad it was Monday that I visited this market. As an aficionado of chicken rice, I have yet to try this vegetarian chicken rice. But if you are a vegetarian, do you have this necessary chicken rice crave here and there? It seems rather contradictory. Yes, you're not eating chicken but, hell mind as well eat the real one or nothing at all. Vegetarian foie gras, wagyu beef, etc. For a chef, it would be challenging to make such food but eating mok stuff, what is the point?

Chatterbox
When I first visited Singapore 32 years ago with my dad, I spent the whole month at Mandarin Hotel (now Meritus Mandarin Hotel), at Orchard. Back then, there were only one of two towers facing Orchard and the top floor was an exclusive Western sytle restaurant (the other tower was under construction). Chatterbox was located in the first floor (until this year) and we used to go there for lunch when we did not pay a visit to the hawker center (I loved there frozen thirst quencher). Chatterbox chicken rice is not one of my favorite chicken rice as of now and at 24++ per person, it is indeed rediculous but 30 years ago, it was my gateway to Singaporean cuisine. Lucky Plaza, Cuppage Plaza, Punggol seafood area, Newton Circus, Cold Storage are still good memories. Now they are quite different like anything else for better or worse.

Fried Chicken Rice
I love fried chicken -that crispy on the outside, juicy on the inside is something I crave for with a ice-cold beer. I also love Singaporean chicken rice, with an extremely appetizing fragrant rice -that is why I serve this at my restaurant. Well, at times you encounter chicken rice with fried chicken instead of poached/roasted one. Wow, this is like a dream combo, both of my favorite in one dish. I couldn't resist but try this best-of-both world dish. Yet to my surprise, the experience was highly disappointing. The logic was very simple -the fried chicken crust that has absorbed the deep frying oil totally wiped out the delicate fragrance of ginger-garlic scented chicken rice. If you have a very nice flavored rice, you need something that will complement the flavor, not destroy them. This is not the case if you taste it with poached(steamed) or roasted chicken, it's the presence of oil. Mind as well serve it with nasi lemak rice (coconut/pandan leaf scented rice) or just plain jasmine rice or maybe nasi goreng but not the delicate chicken rice please.

Chicken Rice Ball @ Famosa

Chicken Rice @ Conrad Hotel
Had a Breakfast (Chicken Rice) in Bed at Conrad Hotel during my visit to Food Asia 2008. Very elegantly dished up I must say. In this day and age, you could buy a burger for $175 @ Daniel's in New York, why not come up with a SG$100 chicken rice one of these days?
