Satay Babi Goreng or simply satay babi is a humble Peranakan dish consisting of sliced pork, rempah (a peranakan version of mirepoix), coconut milk which is stir fried. Very simple yet incredibly satisfying but, I always wonder why the dish is termed "satay" (babi is pork in malay), when it is not skewered like the usual satay (why not babi masak lemak? i.e. pork cooked in coconut milk) nor does it taste like the usual satay. I do own a quite an amount of Peranakan cooking book but none of them explains how this name came about. Anyone knows why it's called satay?
Humble Japanese, trying to de-mystify Singapore cuisine and food culture. This is not a restaurant / stall rating blog.

Ayam Buah Keluak made with buah keluak paste
Buah Keluak nut is such a rare ingredient outside SE Asia. There's not a single vendor that sells this gem in Tokyo. Ever since I have been demonstrated to cook the truly classic Peranaka dish, Ayam Buah Keluak, I wanted to replicate it here in Japan. Well, guess what? I bought this buah keluak paste from the famous Nonya Restaurant / Catering, at 139 East Coast Rd. near Joo Chiat Rd., called Glory. Acutally, not only this paste but they have several ready-made pastes like sambal chilies, curry powders which is quite good. For those who are unfamiliar with this ingredient, please read my previous blog on Ayam Buah Keluak. Well exactly what does it taste like? In my opinion, it does have a similar flavor and texture of a tapenade made with black olives minus briney flavor. With a little bit of rempah (Perankan mire poix / soffritto), belachan, lemon grass, tamarind adn of course the buah keluak paste and chicken, I was rewarded with a hearty comfort peranakan meal. Just hit me with a sambal blachan please!

A Lesson in Nonya Kitchen I: Ayam Buah Keluak
Few years ago, I took a peranakan cooking class from an old charming lady named Mrs. Yap. She showed me from scratch how, ayam buah keluak is made. It was my first encounter using this nuts and as a cook, I was very excited to see this new ingredient come to life. According to Mrs. Patricia Lee from Chilli Padi Nonya Restaurant in the book by Suan, Tan Gek, Gateway to Peranakan Food Culture, Asiapac Books, Singapore, 2004: Ayam buah keluak is the "representative of Peranakan cusine." I feel that's a quite a strong statement. What will be the representative of Japanese cuisine? -I have a few but it's quite difficult to pin-point exactly the specific dish.
Buah keluak nut, from what I hear, is poisonous when eaten raw so, it always needs to be cooked. How poisonous? I do not have a clue. Someone help me on that one. The nut needs to be soaked overnite and the shells need to be brushed well in water to remove dirt. The soaking gets rid of the dirt easily by soaking overnite and at the same time, it also ensures that the poison be removed. The nut, then is cracked using a hammer because the shells are very hard. The inside, which kind of looks like kalamata olives is taken out made into a paste and then shoved back into the nutshell. Rempah (mire poix) is made using standard ingredients -shallots, blachan, lemongrass, candlenut, and dried chili; all pound to a puree. Rempah is then fried really well with oil. Chicken, seasonings, buah keluak and tamarind is added and braised till the gravy is at the right consisitency. The dish then is cooled and rested overnite so that the chicken absorbs the flavor of the sauces. It kind of resembles, chicken braised with tomato, onions and kalamata olives.....

Ayam Bakar
I once had a good coconut gulai (curry) dish down at North Bridge Rd and the preparation to me was quite interesting. Ayam Bakar -so the dish was called, literally translated as "burnt chicken," is a nasi padang dish where chicken thigh is braised in coconut milk and spices till tender and then the chicken is taken out from the sauce, burnt in the oven or burner or on the BBQ. This is a very unique technique. First of all, the sauce gets a nice flavor from the chicken juices and the chicken gets a nice distinct smokey flavor from burining on top of the BBQ. In French cookery, you catch the chicken juices on a pan with mire poix (aka onion, carrots, celery) when you roast them in the oven, and the drippings are made into gravy or sauces. The malay technique is a great alternative, I think.

Heh Ya Kay Char Bak
Sambal Brinjal & Sambal Udang

Itik(itek) Tim: Duck Soup with Kiam Chye
Itik (Itek) Tim is a peranakan dish of Teochew origin (I hypothesize). Basically, this dish is pork stock based robust soup with duck leg, salted-pickled mustard cabbage (kiam chye) and/or tomato, tamarind, sour plum. Although I made the initial stock with pork trotters, I have used minced duck for quick flavored soup -simply make meat balls out of it, since it takes time to braise duck leg (and a little bit fatty and too much duck fat yields crapy flavor). The kiam chye needs some soaking since it is quite salty. The richness from pork and duck together with sour note from mustard cabbage and tomato is out of this world! A soup for the soul, indeed. Give me a bowl of steamed rice!

Nonya Chap Chye & Acar
Chap Chye (pronounced chap chai) not to be confused with chap chye rice, is a dish with mixed vegetables and glass noodles. On the other hand, chap chye rice is not a dish per se but a type of food where you choose various meat and vegetable dishes with rice(2nd photo), also known as economy rice or economical curry rice, etc. The nonya chap chye is composed of glass noodles, prawns, wood ear mushroom, tau kee (bean curd skin), dried lily buds, dried shiitake mushrooms and cabbage. Nice stock from dried shiitake, prawns, and cabbage with tau cheo as a main seasoning is absorbed by glass noodles -yummy. Also, when one speak of Nonya meal, acar pickles (pronounced achar) is definitely a must, together with fiery sambal blacan chilli sauce. Photo below, homemade acar pickles with cucmber, carrots, cabbage, onions, sesame seeds, peanuts and chilles.

Sambal Sotong
I made sambal sotong (squid fried with sambal chilli sauce) the other day, a very unassuming dish and therefore in order to do this dish some justice, one needs to concentrate on simple fresh ingredients and try to achieve bold flavors. What are the basic components of this dish that makes sambal sotong so special? Foremost, you need the flavor of the squid dominating this dish -that neutral seafood flavor with a hint of clam-like sweetness (well they evolved from bi-valves didn't they?), encapsulating this delicate flavor is the right amount of sambal -fiery and yet sweet -mind as well make the sambal sauce with char-roasted chilli peppers for an additional smokey flavor.

Ayam Tempra
Dished up ayam tempra the other day. Wok fried chicken with soy sauce and lime juice with chillies. This reminds me of adobo and was curious, why it is called tempra. What does tempra mean? Does it have any correlation with the Portuguese, since this is Nonya dish/Eurasian? Why do I ask such question? Japanese cuisine "tempura" is said to be of Portuguese ancestory coming from the word "tempera" meaning temper. Deep fried food were never a quintessential Japanese cuisine, it was brought by the Portuguese together with Christianity, Chillies, etc.
