Ramly Burger @ Singapore Railway Station

マレーシアにはラムリーバーガーという一風変わったハンバーガーがある。大手の米バーガーチェーン店とはちがい、多くのクアラルンプールの屋台（pasar malam-パサーマラーム=night market)でこのラムリーバーガーが購入できる。しかもその屋台はラムリーがオーナーではなく、ラムリーバーガー使用のお店で、大体が個人オーナーだ。さてこのラムリーバーガー、シンガポールでも食べれるという事を知った。バーガーマニアの私は、そのラムリーバーガーを食べずに東京へは当然帰れない。Tanjong Pagar Railway Stationのカンティーンで夕方からそのバーガーは売られるとネットで情報を発見した。ちなみにタンジョンパガーレイルウェイステーションの保有者は国営のマレーシア鉄道（通称KTM）だ。なので、シンガポール人はここをマレーシアの一部だとジョークする。たしかに、駅の食堂に入るとマレーシアオーラがムンムンっと漂ってくるし、サインボードもマレー語だらけだ。さて、本題のラムリーバーガーだが、ビーフ又はチキン（時にはシーフードもある）を選ぶ事ができる。そのパテを鉄板で焼き、同じ鉄板で薄焼きオムレツを作り、その焼いたパテを乗せて、ソースをかけ、オムレツで包み込むという茶巾鮨のようなバーガーだ。バンズはマーガリンをたっぷり塗り、鉄板でトーストされる。クセになるのはそのソースでチリソース、マギーソース（ウスターソースのようなアジアンソース）、マヨネーズ、カレー粉。最終的にチーズまで入る、ボリューム満点のバーガーだ。そしてなにより旨い！がしかし、作るのに面倒そうだ。複数のオーダーが入ったらどうやって作るのだ？などと、レストラン経営者なりの変な心配をしてしまう。

As an afficionado of burgers, I've always wanted to try Ramly Burger -the ubiquitous Malaysian hamburger using the Ramly burger patties -beef, chicken and seafood (I believe that the brand coming from Malaysia, are certified halal).  Well, since I frequently visit Singapore, I had to find out (if at all) where the Ramly burgers are sold. Ramly burger chain of stores is quite interesting because the stall (unlike the Mc Donald's eat-in shop) that sells this Ramly burger is not owned by Ramly (maybe some of them are -I do not know), but the majority is just a burger stand that buys patties from Ramly and cook them accordingly.  What differs Ramly from the ordinary burger joints is that the sauces are Asian, -with some chili sauce, some Maggi sauce, mayo and sprinkle of curry powder.  The frozen patties are heated up and wrapped with thin omelette together with the sauce so that the sauce stays intact -quite brilliant.  So, through the internet, I found out that Ramly burger is sold at Singapore Railway station (nice piece of colonial architecture) near Tanjong Pagar.  The stall starts operating from around 4-ish.  I went there at noon and sadly, they were closed, so I had to return back during the nite.  You get a choice of beef or chicken so I chose beef.  I watched the women dishing up my Ramly right before my eyes and it was like being at a teppanyaki joint.  As with Mc Donald's the Ramly patties didn't do much for me but taken together with the sauces plus the richness from the egg, gave a nice complexity.  It was like eating a tacos burger.  Apparently, the Ramly burger wrapped with a sheet of omelette is called "Ramly burger special."  It was indeed a pleasant junky surprise.
