ノニャ料理を食べる時に欠かせないものが二つある。一つは赤唐辛子とブラチャンで作ったサンバルブラチャンというクセのあるチリソース。もう一つは漬物のアチャ-だ。ACARと書いてアチャーと読む。主に、きゅうり・にんじん・キャベツ・大根をいったんお酢で下茹でし、チリ・ゴマ・ピーナッツで和えて漬け込む。
Chap Chye (pronounced chap chai) not to be confused with chap chye rice, is a dish with mixed vegetables and glass noodles. On the other hand, chap chye rice is not a dish per se but a type of food where you choose various meat and vegetable dishes with rice(2nd photo), also known as economy rice or economical curry rice, etc. The nonya chap chye is composed of glass noodles, prawns, wood ear mushroom, tau kee (bean curd skin), dried lily buds, dried shiitake mushrooms and cabbage. Nice stock from dried shiitake, prawns, and cabbage with tau cheo as a main seasoning is absorbed by glass noodles -yummy. Also, when one speak of Nonya meal, acar pickles (pronounced achar) is definitely a must, together with fiery sambal blacan chilli sauce.
