It's hard to find a good recipe for Roti Prata (印度煎饼)-Singapore style flatbread with curry gravy made from mutton or chicken. Demo on making roti prata click here. When I visited the Singaopre National Museum, they had an exhibition on Singapore heritage food and there was something very interesting what they said about roti prata. Roti is a Urdu word in origin and Prata, coming from the word paratha, is Hindi in origin, both meaning flatbread. They failed to explain why Urdu and Hindi word for flatbread combined together though. In Malaysia it is called roti canai (pronounced chanai). It is called canai, because the gravy that comes along with roti is legume based and it's south Indian in origin, namely, canai = Chennai from state of Tamil Nadu. So perhaps this legume based curry is Sambar -most widely eaten legume curry made from lentils (Roti Canai pics 4th photo).
