Singaporeans and Malaysians know that numerous varieties of laksa exist -it's not just Penang laksa and Katong Laksa. Laksa -where did this word originate? "Macau also has a dish called Lacassa......laksa stems from a Sanskrit word laksha for hundred thousand, referring to perhpas to the long list of ingredients....." (Tan, Sylvia (2004), Singapore Heritage Food, Landmark Books Pte. Ltd: Singapore). On the other hand, Oxford Companion to Food by Alan Davidson 1999, Oxford University Press, New York, points out that it is "a term which derives from teh original Persian word for NOODLE, lakhsha (meaning 'slippery')." When I visited Singapore's National Museum, I recall that they say it is a Persian word in origin and that it is quite possible that laksa originated in Melaka during the 17th century when the port was full of Persian traders. I believe nothing is definitive. Anyhow, back to the Sarawak Laksa I had when I visited KL. A coconut gravy style but heavy on the belachan unlike Katong and with a nice tamarind kick? Apparently, in Malaysia you could buy a Sarawak Laksa paste -Swallow brand -I have yet to buy this.
