Laksa: the Hum debate
If you see the photo above and guessed that it is Famous 49 Laksa, you are a laksa fanatic. I read on the internet recently on www.makansutra.com that Marine Parade Laksa owner Mr. Ng believes that topping laksa with cockles is an "ultimate no-no" because it taints the soup. But due to the trend, he tops his laksa with cockles only if you request them. I had a similar experience at Sungei Rd. Laksa. The one I ordered did not come with cockles aka hum. If the authentic laksa do not come with cockles, who is the one responsible for topping laksa with cockles? And what is the reason behind topping laksa with cockles? Of all the topping there are in the world, why cockles? Does it enhance the flavor (I personally am anti-cockles) and why not deep fried shallots? Did this new tradition come from abroad -say Malaysia because I had a nonya laksa at Melaka and it came with bunch of cockles. Just the thought of this hum thing begs a lot of questions -very annoying mystery indeed.

Off the track -Kao Soi Gai
The origin of laksa is still not definite, but there is a laksa-ish noodle in north of Thailand -Chiang Mai and also borders of Thailand and Myanmar -Kao Soi Gai, creamy spicy coconut noodle, topped with crispy deep fried noodles. The origin of this noodle is said to be from Yunnan province of southern China. Apparently, the Hui or Haw Muslim merchants who migrated to the border of Thailand and Myanmar spread this noodle dish. Actually, there is a noodle that resembles laksa noodles / chor beehoon called mixian in yunnan province. Although the soup base is more like sichuan, the noodle is laksa beehoon. This famous kao soi noodle place also serves the Thai-Muslim dish -kao mok gai which is the Thai version of nasi briyani and satay.

Every February, we change the menu slightly for a month. For those residing in Tokyo, come over and devour sambal la la at our restaurant! The killer chili sambal goreng is homemade (of course) and the la la is locally caught, bigger than usual -very juicy. A simple dish which needs no explanation.

Kantong Laksa @ Marine Parade Laksa 加東叻沙
カトンラクサ、別名シンガポールラクサはその名の通り、シンガポールの東に位置する、プラナカンエリアである加東で発祥したラクサ料理のバリエーションの一つである。余談だが兵庫県には加東という町がある事に気がついた。これを機に姉妹協定を結んでは如何だろう?カトンラクサの特徴として、ココナッツ風味のスープは見た目よりあっさりしており、付け合わせのサンバルチリを混ぜる事により、風味とコクが増す。具はシーフードがメインだ:茹でたエビ・フィッシュケーキ(かまぼこのようなもの)、スィーハム(コクルズ=小ぶりの赤貝)だ。カトンラクサは通常、箸わつかずにレンゲだけで食べるのがクラシックだ。麺はレンゲに合わせて細かく切ってあり、スープと麺を同時に食べるのがカトン流。ここは元祖といいながらなぜかオプションで箸が着いてくる。確かに、太めのチョービーフン又はラクサヌードルはスープがあまり絡まない。と同時に箸で食べるとツルツル滑って食べるのに手こずる。ここ40年余の歴史を誇るマリンパレードラクサはお願いすればスィーハムをサーブする直前に乗せてくれる。お店を切り盛りする黄さんは本来スィーハムは乗らないものだと拘っているそうだ。理由はスープの味を台無しにしてしまうから。ちなみにマリンパレードラクサは加東エリアでのラクサブームの火付け役として知られている。なので本当にこのエリアはラクサ屋が多い。

Sarawak Laksa
Singaporeans and Malaysians know that numerous varieties of laksa exist -it's not just Penang laksa and Katong Laksa. Laksa -where did this word originate? "Macau also has a dish called Lacassa......laksa stems from a Sanskrit word laksha for hundred thousand, referring to perhpas to the long list of ingredients....." (Tan, Sylvia (2004), Singapore Heritage Food, Landmark Books Pte. Ltd: Singapore). On the other hand, Oxford Companion to Food by Alan Davidson 1999, Oxford University Press, New York, points out that it is "a term which derives from teh original Persian word for NOODLE, lakhsha (meaning 'slippery')." When I visited Singapore's National Museum, I recall that they say it is a Persian word in origin and that it is quite possible that laksa originated in Melaka during the 17th century when the port was full of Persian traders. I believe nothing is definitive. Anyhow, back to the Sarawak Laksa I had when I visited KL. A coconut gravy style but heavy on the belachan unlike Katong and with a nice tamarind kick? Apparently, in Malaysia you could buy a Sarawak Laksa paste -Swallow brand -I have yet to buy this.
