Wanton Mee 云吞面

Recently cooked up a wanton mee with home made char siu and wantons. I've wanted to accomplish that red food colored type of char siu but was unsuccessful. I guess the marination with the red food coloring is not the way to do it. Hmm, maybe the food coloring with glucose is basted several times while roasting? Anyhow, I used pork shoulder with good marblization but I wonder which cut of pork is frequently used for char siu.... The sauce was made from scratch with home made chilli sauce. I shouldnt have tossed the wantons with the sauce though... nice plump wantons turned brown.. yikes!
